  2. Un buen chorreón de aceite de oliva virgen y una vez caliente sofreír un poco la verdura. Yo uso una olla de 8 litros rápida a fuego un poco alto.
  3. Añado dos litros de agua. Sal y pimienta al gusto. Un poquito jengibre para dar un toque picante. Ojo de no llenar la olla por encima del máximo.
  4. Tapar la olla y poner a máxima presión y a fuego máximo. Una vez arranque el vapor bajar el fuego al 4 y dejar cocer 7 minutos.
  5. Apartar del fuego y descomprimir la olla. Añadir lo que falta de agua. Dejar al fuego 5 minutos más con la olla abierta para que coja buen sabor y ajustar al gusto de sal. Le viene bien un chorreón de vino blanco.
  6. Cuando enfríe un poco se le puede pasar la batidora o dejar como esta.También se le puede quitar el aceite de por encima si no gusta. Lista para consumir o para congelar en porciones. También podéis añadir dos pastillas vaganas para darle más sabor durante la cocción pero no es necesario.
