Pondremos un fondo de aceite y cuando esté caliente vamos a ir dorando la carne, y la vamos sacando a la olla grande, cuando tengamos toda la carne dorada en la olla grande, cubriremos con agua, sal y el romero y dejaremos cocer como una hora y media. - Mientras en la olla que hemos dorado el pollo, freiremos el pan y doramos las almendras, lo pondremos en el vaso de la batidora junto a las especias y los hígados y trituramos bien, volcamos el majado a la olla, añadimos el pimentón y el tomate y movemos bien, dejamos cocer unos minutos y apartamos.
- Cuando tengamos el caldo lo colaremos y desmenuzaremos la carne.
- Volvemos a llevar la olla del sofrito al fuego, añadiendo la carne desmenuzada y como un litro y medio de caldo aproximadamente, dejaremos cocer unos 20 minutos, rectificamos de sal y añadimos los gazpachos dejando 10 minutos más, apartar y dejar reposar unos minutos y servir, con un buen vinito mejor jejeje, a mí me gusta melosito pero no seco del todo, platazo donde los haya...
